By Alessi. The long-handle saucepan can be considered a variation of the casserole with two handles, more suitable for professional use, especially in the larger sizes. It can be used for braising and stewing (especially small cuts of food) and is to be preferred to the sauteuse for the preparation of sauces which do not require mixing (not requiring the use of a whisk) or that are cooked with the lid on (as with tomato and meat sauces). The smallest pan (10 cm) can also be used as a sauce or gravy warmer.
