Anne DeCocco This is a big question. I looked online to see if there was an easy guide for you, but found nothing to pass on. A few things to get you started; the 6 inche diameter recessed lights look very old school to me. Even going down to 5 inch looks more updated! Look at the placement in the above picture--the lights are all far out enough so that their beam just skims the front of the cabinets, which is pretty AND means it's hitting the counter so you can see what you're chopping. Maybe this would help--go to a couple of model homes in your area and steal some ideas (just the ideas, leave the fake food alone)!
