Open island is like open shelves -- but more susceptible to dust & fallen kitchen debris simply b/c your're constantly working above it. Dough, flour dust, crumbs are additional concerns over standard dust build-up. That said, they are very popular, and if you don't mind the extra care in cleaning/ organization, or rinsing everything off before you use it - then go for it!
