When searching for fans online or at stores, there's often an option to search by ceiling height, or something in the specs that describes a low ceiling adapter. I recommend actually going to a store and discussing with a salesperson who will know all the manufacturers and the options for low ceilings.

Kerrie L. Kelly I am sure the ceiling fan assists in the venting, but I bet they used a downdraft system where when a button is pushed, the vent elevates from the countertop and retracts back when not in use.
