I like the backpainted glass - another way to do these back walls would be with high gloss acrylic walls - they create the look of backpainted glass at a lower cost and are easier to work with.

your tile high enough off the floor to allow the baseboard to set against the wall board and be nailed in to framing behind, and provide an expansion space between the bottom of the rabbet and the tile so that the wood can move as it needs to without putting stress on your wall tile.

Designate a smaller space. Stone tiles can be expensive, so instead of going all out, apply them to one designated area. You still score the organic feel without emptying your pockets. The backsplash above the vanity is a great call. It’s where your eye is most often focused while in the bathroom, so
