We set our slabs 2.5" lower to accomodate for stone so that we can set into a mud base. You can thin set stone, it is not recommended because the stone could crack over time from foundation settling etc...

This is real hand cut and laid limestone.
It is a mixture of split face and seam face pieces cut in strips of various heights. I would guess 1", 2", & 3". It's hard to tell for certain from this photo but it looks like quartzite. We have a product
