So if you don't grout the stacked stone, what do you use to stick it to the walls? I hate grouting/spacing

You can use a stone sealer that will help waterproof the stacked stone. Again, I would not recommend in a very damp application, but for a vanity backsplash, the stone sealer should do the trick and will also aid in maintenance.
