after fan installation. Would it be okay if I did't center the fan over the bed?
While it is preferable to center a light or fan in the room, it is ok to have it slightly off center. I would say to only do it if it is not

dangling glowing globes? I love the way they play off the fixture in the center of the room, as well as all the various metal finishes used throughout.
Most people would have mounted this chandelier in the center of the bed canopy. But that would have put it too close to the pendants
