Local architectural salvage companies (our local also salvages the old timber joists from city buildings). You might also check with smaller lumber mills in your area.
Bar-Do this type of shelving above the bar top so there is glass and bottle storage without having to attach anything to the window wall and it will let in the light of the window too. The wood shelves can be thinner and not so beat up, those look to be about 2'' or so.
