The counters are wood, from 5/4" thick, rift and quarter sawn white oak. white oak I used on sailboat construction because of its water resistance

That hood was made by a fabricator that is now out of business.

Another idea to have a stainless or other material hood fabricated with just a simple vent mechanism inside. This might lend itself better to your idea of opening up to the dining room.

Is this home stacked plank construction?
The home is actually a "standard" Philadelphia rowhome constructed around 1900. The section of exposed wall is the original brick construction.
