It looks like the island coutners are thicker than the outside counters. Was the cabinetry height adjusted to account for the different thickness or are they different heights?

No, I never got a definitive answer on the color. I ended up going with a honed jet mist granite, which is a bit darker, but really nice, in my opinion. The honed rather than the high gloss makes it look a little more like soapstone.
