Some clients either want to stick a large hearth/mantle on a wall to small or are scared to because they will loss the counter space even when the kitchen has plenty. Is there a chart or formula you use to advise clients?
No, we don't have a chart. We like to have 4-5' somewhere in the kitchen of uninterrupted work space. Ideally, we want space on either side of the cooktop to set things and we have about 18" behind the stone to set a pot
pot or condiments--this is the minimum you would want and 24" is ideal. As you noted, the island provides plenty of work space for this kitchen.
