It is generally recommended for the range hood to be as wide as the range, in order to provide adequate capture performance at the sides as well as the center.
However, under the following 3 conditions it's acceptable (not "recommended", but merely "acceptable") to

a 48" range is perfectly fine, it's just that when I'm working with an appliance that's 30" or 36" wide, I always go with a hood that's 6" wider when ever I can. It's a better visual fit.
