First thing to think about is the type of heating system you are using - if radiant in the floor, I would use tile over wood. If forced air and or radiant”

“thru the tile and settign bed. That moisture has to have some place to go. It is best if the sub floor is pitched do drain. The moisture wicking out will bring lime deposits with it. This can be unsightly after awhile. Careful detailing is needed here.
I do not think a thin set application on plywood”
“permanent. Tiles can become loose with time or by freeze thaw or by deflection of structure. Stone on a slab is a superior way to go. There are thin set systems available like Mape or Shlueter
