I hope you'll all forgive a small, uninvited tip: native soil is great IF its great. Horse manure can be full of weed seeds and very "hot" (look it up). Some places don't freeze hard enough to heave the ground (obviously not an issue in Chi-town). Homemade compost is often full of seeds, too. I wouldn't

Was fencing designed to deter deer?
I've all but given up on such a garden because of the deer. Is this structure tall enough and strong enough to keep deer out? Its so beautiful!

Can the raised beds be customized to be even higher? I have very arthritic knees which makes gardening (my favorite pastime!!) more challenging now... Hope so!

If squirrels are a problem we can completely enclose the garden system.
That is a 16 x 16 fully enclosed garden system. It stands approx 7 1/2 feet tall. We used vinyl coated 2 in x 4 in fencing overlaid with 1/2 in x 1/2 in vinyl coated hardware cloth.
