sure I will be able to get a thinner granite to avoid a "lip or a step" when the tile and granite are flush up against each other. Is there any work around?

Based on the backsplash, I think that's actually marble - but Ceasarstone and Zodiaq both make a color very similar to this that's meant to look like white marble.

slab showroom today and found a granite called Blanco Montanha that looked similar. There seem to be several names for same granite. Then it is leathered or satin finished. Not glossy. I like it.
The actual granite is 3cm (1 1/4") thick. The edge is mitered to look like 2 1/2" thick. Best to you
