actually considered doing white quarts with a grey fleck, I think that choice would have worked well also but for function we liked the idea of the darker stone

How on earth would you keep this "raw stone" clean?
This stone is beautiful, but with a professional range like the Wolf, there must be some serious cooking going on. So I'm wondering if this seemingly very porous back-splash has a special finish to seal it.

a tight fitting stacked rock wall wall with angular stone has the added advantage of friction working for it. The wall would begin below grade to provide added support. Good compaction of the soil behind the wall is essential.
