In my ideabook, I love the dark cabs with marble.....a little nervous abt marble though..I have corian now so I dont want to go with a
painted wood in a 5 piece door will be more prone to cracking. With that said, these cabinets are painted birch and we use painted maple on a regular basis. (I have painted maple in my own kitchen.) MDF is also very vulnerable to moisture damage. I think it's a good idea to listen to your cabinet maker's advice

Lumber in Marin and had the "v" groove milled but I am sure it is pretty standard and that any larger lumber supplier should be able to get it for you. The v groove is 1/4". Good luck!
