I'm assuming that is flat brick on the ceiling?
I believe it was a low fired brick like one would find in Mexico. It has a rough appearance. The type of ceiling is called a "boveda" ceiling. The owner of this 1928 home had it installed as part of the remodel.
I think they were pine. Our company refaced the cabinets, hood above stove, added the molding below the ceiling. www.carvedcustomcabinets.com We use alder because it accepts any color finish.
