I used Mapei Keracolor unsanded 00 white. Lately I am into highlighting the grouts using a dark shade such as warm gray or pearl gray. As long as you pick a shade of grays from the Carrara marble and use it as your grout color, it will always work out.
did you use on the carrara flooring?

tile is used in this shower? Is it marble?
did you use to adhere the ceiling tiles? Do you use a different process than the walls? We are currently building a steam shower and our contractor is concerned about the ceiling tiles coming loose from the steam.
I used a vinyl clad in mine.
