please recommend someone in NY that can create this affect on my floor
No inlay. The same floor was simply stained to achieve and inlay look. This is the least expensive option for you, keeping your current floor but changing the color. I am not suggesting

having a rug in the space. Keeping bare floors under a dining table — especially in a home with children — is a practical choice that makes clean-up easier. Tile is an especially durable and functional choice, and the mixture of materials makes for a room that is unique.

I love those floors, your installers are incredibly talented.
10. Carve up a room with two types of flooringDivide an open space into smaller segments by introducing flooring in different materials, colours or patterns, which will create a visual division between the two (or more) areas. This design trick is particularly effective between the kitchen and dining
dining areas, as shown here, where floor coverings (such as tiles, concrete and cork) are more practical than others (such as carpet or solid wood) but may not suit the look and feel of the surrounding space.More: 7 Kitchen Flooring Materials That’ll Treat Your Feet
