We put copper countertops in our last home and lived with them for about 10 years. We left them unsealed and let life happen, amazingly beautiful and warm patina that went well with all the wood and concrete elements in the home's design. Usually I just wiped down the counters with a wet rag but about once monthly I would scrub them down with baking soda and then apply mineral oil and buff out to shine them up. This treatment would not remove the patina but would even things out a bit (oil sold for butcher bock maintenance). An interesting detail about copper for countertops is that copper has antibacterial qualities.
