@jlemaitre.. Alder, Poplar, Eastern (harder) or Western (a bit softer) Maple are all wonderful to paint and to tool; this, according to the four experts I've spoken with - all cabinetmakers. Our cabinetmaker owned his own shop in Medford OR for years and is creating the best kitchen of my life. A lot of head scratching on which material to use found us finally deciding on Western Maple (because of the properties of the species and because we're located in the West). It will be painted on 85% of the cabinets and stained on the island and range hood. He says that the beauty of painting well-made wood cabinets is that they can be re-painted if marred, or if you get tired of a color. He also said unpainted surfaces upon which you use tongue oil or another penetrating oil (instead of a stain) allows the color of wood to become richer/darker (oxidation) over time. A stain arrests that variability. I have a log home with vertical grain Douglas Fir cabinets that were treated with an oil (Daly's) only - and over the dozen years it's gotten very red and rather dark, making the room a bit of a cavern. Still pretty (photo below), but eyes wide open as to oxidation potential with just a penetrating oil.

On our new kitchen, I'm personally putting on the undercoat base (Kilz) and two coats of Miller (fine product and company is employee-owned) latex enamel. To anyone saying they lose space by using under mount concealed slides, I say they are using side mount units and have yet to join us in the 21st century.
