Agree tomatoes, zucchini are easy. I would put radishes and carrots in the "medium effort" category since they take some tending as you mention (like thinning). Never had any luck with peppers in my kitchen garden -- the yield we get from each plant is so miserly, it makes more sense to just buy from the green grocers. Some herbs spread really easily if not contained - mint and oregano come to mind. I learned this the hard way.
