How do you maintain the quality of the wood so that inside and outside weather the same?
I do Love the wood paneling and as has been mention its continuation outside, I had thought of extending my own bathroom with a garden
doorway and the floor is heated so that any that does evaporates fairly quickly. In other cases like this, we'll use a very small (1/2" or less) step just to reduce the amount of water that can slosh out of the shower. Hope that is helpful. DA

Need a light coloured wood that isn't too white
That depends on the brown tint and the effect you want to create. I wouldn't choose colors too close to the wood.
Wood stack on side of fire
Around the back. Take the focus off the wood storage entirely by building in an alcove around the back of the fireplace. Here a simple wing wall stores the logs. Design tip: Drywall is very susceptible to damage. Use care when placing your wood inside an alcove like this.
