We made a kitchen many years ago, only problem was on the Island the overhang on it was more than 10" and someone sat at the end on top of the stone. It broke the client had to replace it this time we reduce the overhang and she ensured no one else sits on it.

My island is an antique oak bean counter. So no issues there.

I think if you did this in Honey Crackle you would love the look of your kitchen: http://www.sonomatilemakers.com/LineListDetail.aspx?prod-line-id=1&line-list-id=5&photo-id=1074&IsLineList=True

Sonoma Tile makers are HIGH end tiles. They are GORGEOUS!!!

Looked at your idea book...what is it you like about the stairs? Seems like lots of contrast (dark / light) with stained wood. Maybe you should browse idea books and look at some kitchens that give you the same feeling as the stairs; keeping your dark wood cabinets with modifications, or white kitchens with natural wood accents and see how you can best duplicate the look with what you have/need.

I would change cabinet colors to a lighter shade, if not possible then change doors of top cabinets to have smoke glass fronts. Change the Giallo fiorito granite tops if keeping same cabinets for a light sand color Quartz, Compac Quartz Arena for example. Do tile backsplash is light sand colors and whites, rectangular ones not little squares.

I would paint those cabinets ivory with a carmel glaze to compliment the floors. I would get a hammered type hardware, new light fixtures with punch... I like the barstools and think they would be great with the look I imagine.

For modern look you either want to keep it straight at 2cm or you can have it mitered to a thicker modern look. If you bevel or bullnose a 2cm without building it up it will look way too small.

Eased edge. Rustic = simple. Modern = simple.

If the color is dark as this one it will make your kitchen look smaller than it actually is. Dark color granite look better with lighter color cabinets.

Problem with double sinks 50/50 sinks is that large pots will not fit. I recommend getting a single bowl one or you can always get a 70/30 or 80/20.
