I am the designer, not the homeowner, so I can't fully answer this question for you. However, I can say that we completed this installation in 2006. This particular client writes a food blog and does a considerable amount of cooking in this space. I returned to photograph it in 2008 so this photo is after two years of heavy use. I have had no complaints from this client or any other where we have used honed counter tops over the years. There is some maintenance required for any stone top regardless of whether it is honed or polished. Go with what makes you happy.
