My western sand cherry bushes are loaded with fruit this summer. About half are already 3/4 inch and darkening up nicely. The question I have is: Do cherries have to ripen fully to become edible? These cherries (even though they are black and appear ripe) dont pull easily from the bush and have a taste like an unripe persimmon! You can tell that they are getting sweet but they will turn your mouth inside out when you eat it. Any thoughts?? -Brent
