Eating yellowing leaves on leafy greens

I notice that on many of my leafy greens the lowermost leaves begin to die back. The plants are not at full maturity yet, but I planned to harvest only a few leaves at a time anyway so that they keep going.

If I see leaves beginning to die off is it ok to eat them? Are they nutritionally/flavorfully the same as greener ones or do they lose something during this process? I figured if I catch them just as they begin to turn they can't be that different.
