In the spring, Sempervivums make new rosettes that grow on long thin stalks (rhizomes), sometimes several inches long. These can be removed, and potted. The larger the rosettes are when removed, the better, because there will be more stored water to tide the plant over while it makes new roots.

I don't leave very much of the rhizome when removing pups. It is a specialized kind of root from Mom. Eventually, the pup will have to make its own roots, and these will form directly under the rosette. You can just lay them down on the ground, and they will root quickly in the spring.

The two that I took are about 2" and 3" in diameter. They seem healthy. I just wasn't sure about the leftover root. Also I was concerned about having left them out for about an hour before getting them in fresh soil.

Actually, you can leave them out of the soil for months. Succulents generally like 3-7 days of drying in the air to callous over any cuts or nicks that are entry portals for fungi. There is no rush to put them into 'fresh' (does that mean damp?) soil. Just lay the pups (those are plenty big enough) down on dry soil, and mist lightly from time to time until they have roots. Being succulents, they have plenty of water reserves to last for a long time, just don't put them out in full sun. They should root in few weeks this time of year.

I agree with what others have said. Hen-and-chicks are pretty tough, so I am sure yours will do well.
