I have one of those basic graniteware BWB canners. It's a 21 quart - or thereabouts. Holds 7 quart jars. I have 2 issues with it.
1) The rack inside is rusting. Since I live in an area that tends to get an outdoor watering ban every summer, I like to save my water to water my plants - and I don't like to feed them rusty water. By the next morning, the water is practically black. So I couldn't even save water overnight to process jars the next day.
2) When I process quarts - to get 2" of water above the tops would literally have my water to the top of the pot. So I do 1" instead, and get lots of water splashing onto my stove pot. Which makes a mess to clean up. And then need to check a couple times during tomato processing to assure that enough water is still in the canner.
So I'm debating - should I get a new stainless steel rack to go in my existing canner? Or should I just buy a new BWB canner?
Who has a BWB canner where you can get sufficient water on top of quarts?
I can't go bigger than the 21 quart size since I have a glass top stove. (Or maybe I should go bigger, break the stove and then I have the perfect excuse to buy a new gas stove?)
