Apple juice is fine to use as the liquid. Even plain water is safe. You will not have the fruit as firm, though, as with sugar syrup. The heavier the sugar syrup, the more firm the fruit will stay.

Katrina are you into dehydrating at all? Lots of those apples would work great sliced and dried.

The marachino cherry applesauce I made day before yesterday is very good. I think Linda Lou was the one who mentioned using the combination. You can also add a lot of other fruits to apples when making applesauce which give delightful flavors to it.
