Doubt if it will have much effect on flavor, but incorporating organic matter into the soil will greatly enhance production and visual appearance of snap beans. I use rye as a winter cover crop and mulch with leaves after the plants get a good size. Anything that will grow in the winter will make a decent cover crop. Rye works well IF you use a turning plow, The sod is very difficult for small rotary tillers.
