My Jelly BOMBED out ... any fix's??

Well, I tried Ottawapeppers cranberry habanero jelly recipe .... except I couldnt find cranberries so I substituted a berry mix for the cranberries in the same proportions (strawberries, blackberries, blueberries, rasberries).

3/4 cup white vinegar

3/4 cup apple vinegar

1/2 cup diced habs

1/2 cup red onion

1 3/4 cups berry mixture

1 pkg pectin

5 cups sugar

Only problem is, theres different sizes of pectin packeges and I just bought the standard 1.75 oz pouch.

I combined all ingredients except sugar and pectin, brought to a boil, simmered for 15 minutes, added sugar, brought back to a boil for 1 minute. Removed from heat, added pection. Put it in jars, and hot water bathed it for 10 minutes.

It didnt set! I know have 3 pints of runny hot stuff Im not sure what to do with.

I even tried to reconstitute it by a fix I found on the net. I used 6 tablespoons more of pectin, 3/8 cups sugar, 3/8 cups cranberry juice, 3 tablespoons lime juice and brought that to a boil, then dumped the jelly jar contents BACK into the pectin mixture, brought to a boil for 1 minute, jarred and let cool.

Still no bueno ... its runny ... what gives??

If I can fix it what can I do with 3 freaking pints of runniness .. lol ... maybe an icecream topping/sauce??? lol
