I like option 2. Just stayed at a hotel last weekend that had a version of ootion 2 and it didn't feel cramped. Counter space is very important after the fact. You might even consider a trough sink if your drawers are to be installed on the wall sides.

A 60" vanity is really too short for 2 sinks, so that rules out #3. You can do it, but it leaves very little useable counter space. In an alcove particularly, it would be ever so cozy with 2 people actually in there at the same time.

I would hesitate to do a furniture style vanity because of the cleaning issues. You'd forever have dust and hair and lint down the sides and in the back corners. Cleaning under immoveable furniture in confined spaces just isn't so much fun. OTOH, some people don't mind as much as I do.

That leaves #1. I think you can make your rustic look work with careful choice of surfaces and style.

We were thinking soapstone top (our kitchen counters are soapstone).

I have some barnwood from my in laws. I'll have to see if I can make a face frame out of it and still have enough for door and drawer fronts.

It's amazing how all these small details add up.

I think a 60 inch vanity can definitly have 2 sinks. If you opt for smaller undermount sinks you will get a few more inches of counter top space.
I used Kohler's Caxton K-2209. The inside measurements are 15x12x7.5. We find it plenty big enough and don't have problems with splash out. Here's how they look in our 60 inch vanity.

badgergal, are you certain your vanity isn't 72"? It looks like you have 12" and 15" on either end plus sink, which would leave only 6" in the middle if it were 60". We have a 60" two-sink vanity and don't have as much room on the ends as you do. We used Kohler Archer undermount sinks. (I don't need much counter space. We keep the hair dryers in the drawers plugged in behind the vanity, and each morning, I take out my little basket with my daily "needs" - toothpaste, makeup, hairbrush, etc. - and put it away when I'm done).

sjhockeyfan, you had me worried for a bit that my 60 year old brain might be confused about 60 inches or 6 feet as far as my vanity goes. I had to measure it to confirm that I am not losing my mind. So here it is with the tape measure. You should be able to see the numbers if you zoom in. With the overhang the top is 62 inches.
arc2v, remember in an alcove installation you would lose the extra 2 inches that I have on my top because of the overhang. i still think you would have enough room if you used the same sinks I did.

We used slightly bigger sinks than badgergal so we have less counter space on the ends, but there is still plenty of room for us on our 60" vanity.

i would go with option #3 before option #2, though. In a small alcove, the furniture style vanity with small gaps would be a pain to clean, paint around, etc. I even find the somewhat larger gap on one side of our vanity a bit annoying sometimes.
