We used 2 panel knotty alder, may work well for you.

Have you already selected your your exterior doors/windows as well as your wall finish and trim (if any)? I would want the interior doors to harmonize with those. For example, if you are planning no trim/no muntins/plaster or drywall I think slab doors might be appropriate.

Our house is not minimalist, but we do have painted 3-panel doors throughout. The sticking is slightly beveled for easier cleaning. Most of the house has finished drywall and simple trim, but the "public" portions have a shiplap treatment.

This is the mudroom pocket door, we just leave it open. It's the only 3-panel door off the "public" area.

We have a couple of utility doors off the "public" areas that we wanted to de-emphasize, so we had them use a treatment similar to the walls. [I just realized I should have photographed the closet door instead since that blends in better, this is an elevator door with special requirements so it looks a bit funky.]

I would think that for a minimalist house, you would want slab doors with minimal trim. And for a rustic house, you would want wood, reclaimed if possible. Combining them, I would opt for reclaimed wood slab doors. Second choice would be knotty wood slab doors. And third, paint grade slab doors. Panels are antithetical to minimalism, no?

Here are some ideas. The barn style door is really popular, but I think these would look great as swing doors too.

My house is not rustic but leans minimalist / mcm with lots of wood. We ordered walnut veneered slab doors.

Our friends who have a bit of reclaimed wood as accent walls have paint-grade slab doors. I think it looks nice and can't imagine paneled doors in their space. What kind of trim will you have? And what rustic elements?

new2build, I love knotty alder, but I think would be too busy with my knotty oak floor. I bet your doors are beautiful, though!

maxmillion, if you have time, could I trouble you for a photo of your doors? If we did do veneer slab, it would be walnut, so I'd love to see them.

We ordered our doors really late, so they won't arrive until next month. I can take a pic for you then if you're still interested. I'm hoping they look as good as I am imagining!

Most of our interior doors are pocket doors and are one panel, framed. I don't know what it's called. They are painted the same color as the walls, so blend in when you do see them. That's the minimal side. On the rustic side, we have one closet door that you see from the living area that's a barn door. The wood is clear cedar T&G left over from an outside wall. Another hall closet is T&G, but is a bypass door. Both of those were site-built using a hollow core door as a lightweight frame.

Maxmillion, mind if I ask if your doors were custom or readily available?
Lori, our situations sound similar. We have several pocket doors which will be very simple, probably slab, and two barn doors. The remainder are the ones I'm trying to figure out: bed and bath doors. It's a tough balance to find. When I see photos of Scandinavian homes, which I love, I see both slab and panel doors in play- and I love them both! Decisions, decisions....

They are readily available with 6 week lead time, but I'm not sure who they are made by. Our GC ordered them through his local door vendor.

I found a couple options for walnut doors online, but our GC talked me out of them. He said that with hanging, finishing and shipping, the cost savings would not be worth potential snags. And we really wanted matching stain-grade jambs which was a deal breaker. This might help you though:
