Bread bakers ... who makes pumpernickel?

I've been using the recipe in Healthy Bread in 5 Minutes a Day, but would like to try a recipe not as wet ... something that wouldn't spread as much as this dough. The bread tastes great, but I'd like a little more lift.

    I haven't made it in quite a while but the Pumpernickel we like best is the one that was on the old Fleishman yeast packets...it is identical to the one in Bernard Clayton's book also. It is very dark and rich and lovely to work with. It has cocoa in it and caraway seeds . I used to make it all the time and use it for ham sandwiches. It was also great toasted with orange marmalade...yum !! You are making me hungry natal !! If you like I will go and pull it out and write it out for you here.

    Caroline, when you said Bernard Clayton I did a quick search and found this on Cooking Light. Is it the same recipe?

    I'm cooking Easter dinner tonight and made the bread so we could have ham sandwiches this week. Perfect combination!

    No I haven't used that one. I will link to a copy I found on line for his loaf. It is very rich and moist. Add the flour slowly and start with less than he calls for till you see how much you will need. All flours are not the same. Hope you have a wonderful meal. c

    I like the sound of that one much better. Wasn't crazy about the addition of corn meal and mashed potatoes in the other one. I should be able to easily sub a little whole wheat for some of the all purpose. Thanks for the link!

    I used to make it in my Cuisinart. I never had a problem. Also you can skip the retard in the fridge and just put it in a warm place and let it rise...takes about 1 1/2 -2 hrs and then bake. I usually do that and it works great. A very moist loaf. Let me know how it goes...post pics :) c

    OMG, what a great idea for a post-Easter meal, Natal! Caroline, that recipe sounds wonderful! This is just one reson I love this forum so much :~)

    Lynn we had a very quiet and lovely time with just DH and DD. I did a boneless leg of lamb in the Miele rotisserie and it was perfect. We had our dinner on Sat. night so that DD could leave for home early on Sunday. Worked out great. Hope you too had a wonderful time with your son at home. c

    Thanks, C, ours was wonderful with DS home with us. I didn't have time to make the pumpernickel bread this time, but bought some at our village deli for dinner this evening. It'll make a nice change for our Easter leftover ham. Yum!
