What's for dinner Sunday?

I'm having chicken and rice--Stouffer's style. I am anxious to start cooking Tuesday. Just hope I'm able to eat some of what I cook!

It was a beautiful day here, but more cold weather on the way, I hear. Hope you've had a good weekend. What's for dinner tonight?

    I am having meatloaf and baked potato-either sweet or white and some corn. I really don't make good meatloaf but I keep trying. I bought meatloaf mix on sale last week so made 3 mini loaves and one in a 8x8 pan. It is spread out on the bottom of the pan and is about 1.5 inches deep. Im going to make a dish my Dad used to make which is treating the meat like a pizza crust and topping it with tomato, mushroom, cheese etc. But for tonight just meatloaf and potato. Satine

    satine, never thought of doing a 'pizza' type dish out of meatloaf. Sounds pretty good.

    Snow and more snow. Temps are to get into high 20s up till midnight, then drop like a lead balloon.

    I had tilapia tonight with home fries and lima beans.

    Cold again, and it just started to snow again in the past hour.

    I too have meatloaf in the oven. I minced carrot, onion and kale and added it to the meat mixture. I also had a few bIack beans which I added. I put it in a muffin tin and made 10 little "muffins". Roasting white and sweet potatoes in the oven, and sauteed broccoli.

    Two sausage links, two pancakes, two over easy eggs

    I like to slide my eggs onto a pancake! Tasty! The other pancake gets the syrup.

    The plan is garlic chicken and creamy orzo with parm and spinach.

    I will bake a few extra chicken breasts for Lasagna rolls on Tuesday. :)

    Just came in from cutting down blackberries that invaded one of my flower beds..Now just to wait until the stalks I couldn't pull out leaf a bit, so I can spray them.

    We are headed out to a Bar/ Grill shortly to meet up with friends soon..so we'll see if I actually eat dinner tonight. ;)

    We had a late lunch, Salisbury steak, mushroom gravy on mashed potatoes, coleslaw and homemade yeast rolls. So this evening I am just munching on popcorn.

    I have these pre- seasoned pork medallions, on the package they called them pork ribeye, I am cooking them in the oven topped with mushrooms, cheese and bacon crumbles. Will put diced tomatoes and Avocado on top. Plus a salad.

    Robert has been marinating a couple of ribeyes and he'll dodge out in the cold to grill them.

    I'm going to mash a couple of sweet potatoes with a white, my first time to try this but much recommended by some of you. I'll also saute a mess o mushrooms and make a little butter sauce for everything. Green salad on the side....or maybe steamed green beans.

    Lots of meat loaf the last few daysl in this forum. I have never been able to make one that sticks together. I love a good meatloaf.....even better (maybe) as a sandwich with horseradish sauce.

    Dinner tonight was chicken cordon bleu with mashed potato & a salad.

    Beautiful day today, almost hit 55 deg. but the very cold weather comes back over night.

    Today we bought in more firewood, cleaned the wood stove & chimney. All set for the coming week's weather.

    I sent DH to the grocery store for some fries so I could make fish and chips and he came back with a pizza from our local Italian restaurant. It's grilled veggie - quite tasty.

    we went to Costco and picked up one of the salmon dinners...sad to say it wasn't great! just ok...a little fishy...made rice and mixed leaf salad....

    DS is preparing grilled Salmon and rice/w quinoa side and a green salad..... maybe a bite of sourdough boule bread left over from brunch. (The bread is "dessert" for me, my weakness).

    I had a grilled hot dog, no bun, a few fries, buttered carrots, and cucumber slices. I'm not a big eater; doesn't take much for me.

    About meat loaf, I think the Lipton Onion recipe is really good so that is what I use. Its about time I made one,too. I have everything I need so I might do that tomorrow.

    If I can find it among my "stuff" I'll post something humorous about meatloaves one day. It is from an old KT thread.

    Chicken cordon bleu (the frozen kind you just bake) and hash brown casserole (my daughter brought me a small casserole of it ready to bake) for me. Basically I just put these things in the oven to cook , no work.

    I made a huge pot of chili with shredded cheddar cheese and a loaf of Italian bread on the side. We went to visit our son this weekend and our daughter and her boyfriend came to visit also.

    Anytime I get to see my kids it's a GREAT weekend.

    I'm late with this but thought I'd share anyway. I've been turned on to the low and slow method of cooking. So far I've done french dip sandwiches - bottom round roast and yesterday we did a fresh chicken. The concept is to cook for hours at low temperatures. So far I've use 170 degrees. The meat temperature never rises about 170. We did the bottom round for just a bit too long. I should have gotten it out when the temp read about 150 so it could rest for slicing. Yesterday's chicken on the other hand, so good. All I did was salt and pepper the inside/outside the night before and left in the fridge over night. In the morning I took it out about an hour before cooking. I cranked the oven to 500 to crispen it up then dropped it down to 170 for about 6 hours. I did baste it with olive oil, rosemary and thyme and stuck some lemons in the cavity. It was the juiciest chicken I've ever done and so flavorful. Broccoli and garlic mashed tatoes along with a wilted lettuce salad with hot bacon dressing. Leftovers for lunch today.
