HVAC recommendation

We live in Northern California (San Jose) with mild winter (rarely go below freezing and never snow). We are not home a lot. Last winter, we spent about $200 (our gas cost is about $1.2/Therms) for gas furnace in a poorly insulated house with old single pane window. We are remodeling the house to double the size (3000sf with mostly 10' ceiling) but adding good insulation and good double pane windows. Price of electricity is about $0.12/KWH. I don't know the cost for new furnace/heat pump and would appreciate your recommendation:

1. Do you recommend furnace or heat pump? What would be the best brand/model based on the following criteria:

- Reliability: good repair record and guarantee

- Sealed combustion (I sometimes smell gas around my current old furnace) with no open pilot light

- Quiet

- Cost

2. The house can be divided into a few "zones". What's the best way to handle these different needs efficiently? I talked to a HVAC company and it says that they don't recommend "zones" for California but can't explain why to me.

- Family room/Kitchen - 90% of the heating needs since we spend almost all our time there

- Bedrooms - - Living room/Dinning Room & Bonus open room in the attic area - 5-10 days when we have guests over.

3. AC - If we have AC, we probably would only use it 5 days a year. I hate to spend a few thousand dollars for those 5 days. Any recommendation for the most efficient way to cool the house without AC?
