If you're not cutting on it, I'd use Waterlox.

Thanks rhome! That's what I was thinking, but I wasn't sure why. Probably from reading all the posts here. I'm sure that's the only way I would have even heard of Waterlox.

I first heard of Waterlox here, too, and I introduced it to my woodworker husband. I've used it on every piece of interior woodwork in our new house (interior doors, door casing, baseboard, and cabinet doors and drawer fronts) and will also use it on our wood-topped island, which will have a sink, but won't be cut on. We are so impressed with the finish, and won't worry about damp wiping it, setting glasses on it, etc. It's easy to repair/refresh, if needed, and protects really well. It should look great for a very long time with the light use your surface will get.

If you go to 'my page' linked by my user name, you can look at my clippings to read instructions given by Mondragon for how he used it on a table. For our woodwork I didn't do the tung oil only step, and probably will just brush on 2 coats of the Waterlox Original Sealer followed by the Waterlox Satin finish (a few coats rubbed on, rather than brushed), as I've done on everything else.
