Need ideas on kitchen layout & I need your ideas :)

Today is one month after we decided to remodel our kitchen (finally). So many many decision and we haven't even started remodeling (it's been fun but a lot of work)

Some pictures of the kitchen.

The big question is whether to take this wall down that divides the family room and kitchen?

We are planning to expand the kitchen outward and take down the bay window.

Our kitchen is actually on the second story and this is the outside deck. We will be expanding outward following the arrows.

Other side of kitchen. I am planning to put the refrigerator here.

The house is a french style and has antique victorian decor. I am thinking of putting dark chocolate cabinets with a light colored granite. The floors I am thinking of cream colored 18"x18" neutral titles..

I bought a whole bunch of Viking appliances used (36" all refrigerator and 36" all freezer with trim kit), 48" dual fuel range with 2 ovens below, warming drawer, 30" microwave, 54" viking island hood, 2 single fisher and paykel dish drawer single units, viking chamber. I am thinking of a large stainless apron front sink.

Some questions:

1. Would it be better if the wall in the first picture was demolished (assuming it's not load barring?).

2. Any recommendations for other layouts?

Thanks!
