butcherblock counter

I have a new cherry butcherblock counter that I have been putting a tung oil finish on. There seems to be problem with the way it is absorbed. 1/2 is matte and 1/2 is glossy. This runs the length of the counter and there are also 2 diagonal areas that run across the whole thing. Also the line is wavy not driven by the board placement. It didn't seem apparent until after the 1st 2 coats and seems more apparent as more coats are applied. (Maybe I'm just looking at it more?!?) Do I sand down and start over or continue with more coats hoping for evening out of the absorbtion?
