Kitchen and Bath Countertops - stone and estimates

We really like the simple, plain white quartz countertops for our custom home and we selected a caesarstone for the entire house. When it came back well over the allowance, it gave me a chance to investigate. Evidently we weren't getting caesarstone, we were getting a less expensive vicostone, which I'm fine with (I don't need name brand). But it was still over the allowance ($1275 over the budgeted $5650). I spoke to the subcontractor and he said we could go with 2-inch instead of 3-inch and it would be cheaper.

I have a couple questions:I've heard that quartz tile is less expensive. Does anyone have experience with quartz tile (Daltile anyone?)?

Also, the subcontractor sent me the dimensions on the countertops and they came in over 10 sq ft. higher than my estimates. Is that common or are they inflating the dimensions?
