I wouldn't put that stuff in the pot of any plant, or anything that retains moisture and is of tiny particles. Sans would be near the top of the list if I had to prioritize which plants to keep farthest away from it.

Tiffany, can I plant Sans in a glass container filled with pebbles with a drop of (fertilised) water?

I wonder why they said sphagnum and not peat. I wouldn't use sphagnum for anything but a top dressing. There are many plants you can grow semi hydro but Sans isn't one I'd try. I wouldn't use sand either. I have never had luck with sand as a soil additive. The particles are too small and compact. When I did use sand it was the only time I had cats interested in my plants.

I too wonder why they suggest either one, maybe it's greenhouse thinking, like for those meaty, spongy EA mixes that stay wet so very long.

I've actually grown Sans in hydro (or SH), seems unlikely but works quite well.

in Leca stones & water, grown from a single leaf, about 5 yrs. old.
