I think if you are not working with a designer, it is difficult to pick colors on your own with all the other stressors of building a home. I think it is much easier to select a neutral that could work with many things and use that pretty much throughout - at least in all open spaces that flow together. Then you can select paint colors for bathrooms when you select your tile and cabinetry and maybe even for bedrooms if you know in advance what colors will be used in the rooms. If you don't know, keep them neutral as well. You can then repaint walls later as you address each room and how it is furnished.

In working with several clients recently who are putting their homes on the market to sell, we have gone with SW Accessible Beige or SW Agreeable Gray throughout. Pretty neutral.

As far as trim, use a white that you feel is pleasing. I don't care for a glossly start white, but usually go towards something just slightly on the warm side. I like to use the same trim paint throughout a home.

You can get some samples and paint some boards and some trim boards just to see how they go together even if you can't put them in the space yet.
