Is the dining table in the kitchen? If the table will be used regularly and without a table cloth, I would begin looking for surfaces that don't show finger prints which would eliminate many black surfaces. Would a bleached color look good? Maybe you can post a picture of the colors in use in the existing space?

It is in the kitchen, and does get used regularly.

I'd go a darker than the cabinets, picking up the dark flecks in the granite. It would be hard to get a bleached or "cerised" finish that blended well with the granite.

If you get a low sheen finish with some shading and distressing on the planks, the fingerprints will be less noticeable. We have a dark table from World Imports that shows almost nothing between cleanings.
