Small kitchen: Do I have enough light? Builder says I do.

We are renovating 3 bays of a detached garage into a small apartment. The space includes a 20x14ish kitchen/livingroom, and I'm unsure of how and what kind of lights to request fo the space. Our builder said a pendant over the diningroom table & gooseneck over the sink would be enough light for the kitchen. I'm worried about leaving the counters unlit, so I'm thinking of adding either 2 cans or 2 pendants (bonus: we already own them; caveat: they're nickel and don't match the brass accordion pendant over the table). Below is a rough of the kitchen (very rough, just to show where things are). In the adjacent livingroom, we are thinking of doing just two sconces on the wall and augmenting with floor or table lamps. (This is a budget project, clearly). Any advice for lighting this space?
