I am trying to go for a similar modern (no backsplash) look...how does one abut a countertop like this to the wall without there being ugly gaps? should i remove the texture from my wall and plaster them flat?

    Unless the texture on your drywall is extremely thick, it shouldn't need to be removed. In this room, the drywall had a smooth finish, but we still installed a piece of knife mould where the counter top meets the wall, and caulked and painted it.
