OK, Let's Talk Recipes and Our Favorite Go-To Meals

last modified: 9 years ago

Mtn had a really great idea, to list our 10 favorite go-to dinners. I'd like to expand that even more, if I may. How about copying the list below and then listing your own favorite for each one? And then, perhaps, we can start spin-off threads for each of the categories, where we can add those actual recipes. And, yes, I know that there is a cooking forum here on Houzz, but I don't know them. I know you all here and am interested in your recipes and ideas.

As you all know, I love to cook and to try new recipes, but don't we all get in ruts sometimes? Maybe this and the spin-off threads will give us all some new ideas. I know that I , personally, am always in a rut when it comes to weekend lunches. Ugh! I'd rather just order unhealthful take-outs, which DH would never agree to, even if we lived where take-outs were possible (LOL)!

OK, so copy and paste the below list to your own post and list something for wherever you want. I don't expect Vegetarians to have a favorite beef dish, but if you do have a fav, please share it with us. And, please, nothing too time-consuming or with tons of ingredients! Think, easy favs.

I'll do my best to fill out all the categories-- but truly, my go-to favorites seem to favor a few categories.

For me, a go-to has to be pretty simple to prepare with no hard-to-find ingredients

    My Favorites:

    - Beef Main Dish: grilled steak w/garlic mushrooms

    - Ground Beef Main Dish: meatloaf with spinach, mushrooms and walnuts

    - Chicken Main Dish: chicken breast stuffed with spinach (onions and parm) .. you didn't include turkey but I also like to roast a split turkey breast with citrus and herbs (leftovers go to sandwiches, salads, tetrazzini or baked penne w/turkey & cauliflower).

-Ground Chicken or Turkey Main Dish: 1. Giada's rosemary chicken burgers

    2. chicken meatballs (italian style OR Asian w/ginger and garlic for banh mi)

    - Pork Main Dish: mojo pork

    - Vegetarian Main Dish: spinach stuffed shells or spinach & zucchini (no pasta) lasagna

    - Pasta Main Dish: rigatoni with zucchini and sausage (pork or turkey)

    - Out on the Grill Main Dish: grilled halibut or tuna w/ citrus & herbs

    - Main Dish Salad: grilled chicken with cranberries and walnuts.. or grapefruit and cashews .. or any fruit/nut combo. Also tuna macaroni salad

    - Fish Main Dish: baked cod with panko

    - Other Seafood Main Dish (such as Shrimp, Scallops, Etc.): ina's baked shrimp scampi or grilled scallops

    - Vegan Main Dish: channa masala

    - Homemade Soup: split pea, spicy sausage and bean, curried cauliflower, Italian wedding (using TJ's harvest blend instead of orzo), Mexican chickpea

    - Main Dish Sandwich: grilled chicken with zucchini, onions, peppers and provolone.

    - Non-Vegetable Side Dish: baked sweet potato with cayenne

    - Veggie Side Dish: sautéed Brussel sprouts w/garlic, Cuban black beans

    - Quick & Easy Dessert: pear tarts

    - Breakfast Main Dish: any of a variety of quiches/frittatas (makes a great hearty brunch if you add traditional Italian sausage and peppers)

    My Favorites:

    - Beef Main Dish: Flank steak, pan fried to rare/medium rare. Seasoned with low sodium soy, garlic powder and ground pepper.

    - Ground Beef Main Dish: Locavore sourced ground beef (to avoid having hundreds of different animals ground up into the same dish...) cooked up with chopped onions and seasonings into sliders and served in lettuce wraps rather than in buns. Topped with Dijon mustard.

    - Chicken Main Dish: Bone-in, skin-on chicken thighs baked with balsamic vinegar (plain or raspberry), garlic powder, ground pepper. Cook until skin is very crispy. I actually had this for dinner just now!

-Ground Chicken or Turkey Main Dish: I haven't been able to find ground chicken or ground turkey that isn't made up of parts from hundreds of animals, so I PASS on this. But if I had no choice, I'd saute it a long time with soy sauce and other seasonings, and serve it over zoodles.

    - Pork Main Dish: Country style ribs with homemade BBQ sauce (no sugar), grilled or baked

    - Vegetarian Main Dish: Eggplant pizzas - slice the eggplants to 1/2 inch thickness (remove skin if necessary), pan fry until cooked but not disintegrating, top with a thick homemade tomato sauce with loads of oregano and minced garlic. Over this, put any sliced veggies you like - mushrooms are great for instance. Top with mozz cheese. Bake

    - Pasta Main Dish: I like lasagna, but don't make it myself. The only other pasta dish I like is skillet mac and cheese, use 3-4 types of complementary cheeses, and a lot of veggies to make it nutritious and more tasty. Broccoli works, so does bok choy. And/or snow peas, and/or previously-roasted Brussels sprouts. Mushrooms also good in this. Add seasonings, including minced garlic, too. Please not the boring plain!

    - Out on the Grill Main Dish: Chicken tandoori, using thighs and legs.

    - Main Dish Salad: Cobb salad. Add avocado.

    - Fish Main Dish: Baked or grilled salmon, with lemon and dill

    - Other Seafood Main Dish (such as Shrimp, Scallops, Etc.): Lobster. Dipping sauce: butter with garlic powder, a splash of Tabasco.

    - Vegan Main Dish: Indian curried veggies, with tomato, mushrooms, okra, onions, chopped garlic.

    - Homemade Soup: Rhode Island clam chowder, just a few potatoes. Heavy on the Rhode Island broth and on the clams.

    - Main Dish Sandwich: Roasted melted cheese open face with mushrooms. Two types of cheese, neither of which would be American. Preferably on quality bread; rye or sourdough is good.

    - Non-Vegetable Side Dish: Bacon? I'd actually say Southern style collard greens with smoked ham hocks. Or if you mean a grain or pseudo grain: Quinoa cooked in broth, preferably home made stock, with minced onions.

    - Veggie Side Dish: Asparagus. Ideally, thin stemmed, topped with butter and parm cheese and a little ground pepper. Either baked, or nuked (this is the only food I'll ever nuke to cook, as opposed to re-heat)

    - Quick & Easy Dessert: Fresh raspberries from my yard. Rinse, and done.

    - Breakfast Main Dish: Omelet with cheddar, spinach, onions (internal ingredients will vary, but always a cheese)

Thanks for leading the charge, Lynn! Believe it or not I was scribbling notes on a notepad about how I might structure a thread to help give us all ideas, but I like your way of organizing it!

Disclaimer - I am listing things that I would make for my family that all of them would eat happily, and that are not terribly difficult (and some are really easy). I make very little in the way of Italian, Asian, or desserts. One of my pet peeves is the over-proliferation of Italian restaurants (even very good takeout), so I feel that cuisine is very easy to get fine examples of so I don't bother with it much.. I am not crazy about the oil taste in a lot of Asian fare, and I find ginger is often too strong, and it is another category where it is easy to get good takeout. I also almost never make dessert for family. There are so many good sources for dessert, local artisanal bakeries, gelato shops, etc, there really is no lack. And then there are no leftovers either. I do like making elaborate desserts when we entertain.

    - Beef Main Dish:Korean bbq flank steak

    - Ground Beef Main Dish: Tacos made w Alton Brown Taco spice mix, "Scramburger" (ground beef sauteed with diced onions)

    - Chicken Main Dish: Chicken Sauteed with Mushrooms and Onions, Feta spinach chicken sausages, Pistachio crusted chicken breasts, Chicken/spinach quesadillas

-Ground Chicken or Turkey Main Dish: Deconstructed Chicken Samosas, Panko-breaded Turkey cutlets

    - Pork Main Dish: Teriyaki pork chops on the grill

    - Vegetarian Main Dish: Veggie pizza

    - Pasta Main Dish: Light(er) Fettucini Alfredo

    - Out on the Grill Main Dish:Leg o lamb with pita and tzatziki, Balsamic Chicken

    - Main Dish Salad: We have salads probably every other night, but almost never a main dish salad. Sometimes a Caesar with chicken. I have a standard rotation of salad dressings and usually have 2 or 3 on hand ...Champagne Vinaigrette, Red Pepper Jelly Vinaigrette, Maple, Caesar, Light Blue Cheese, Russian, etc.

    - Fish Main Dish: Halibut or red snapper with lemon herb butter

    - Other Seafood Main Dish (such as Shrimp, Scallops, Etc.): allergic to shellfish!

    - Vegan Main Dish:

    - Homemade Soup:Tortilla soup

    - Main Dish Sandwich: Cooked Portobello with sauteed onion on ciabatta w raw spinach, romesco sauce and goat cheese. Cheddar/Apple/FigJam/Multigrain Paninis. "French Dip"; make garlic bread, heat beef broth. Swish a few ounces of deli roast beef at a time in hot broth (do NOT overcook), put on a piece of garlic bread, serve.

    - Non-Vegetable Side Dish: TJ Brown rice mix, Couscous, Perogies, "Fake Mac n Cheese" (cook some elbows, toss w a soupcon of butter and garlic salt. Lay in casserole dish , sprinkle cheese and panko, broil till bubbly.

    - Veggie Side Dish: Oven-roasted broccoli, Green Beans with sauteed pine nuts or almonds, Asparagus Parmesan, Praeger's Spinach Patties, Fresh blanched crudites w homemade dip, Spiral zucchini sauteed w evoo and garlic, Baked yams, Waldorf Salad

    - Quick & Easy Dessert: Baked apple bar, with greek yogurt, honey, premium granola toppings. Whole strawberries dipped in sour cream rolled in brown sugar.

    - Breakfast Main Dish: Whole Wheat Pumpkin waffles ...if brunch, with sauteed apples and frizzled deli ham on the side

    - Pork Main Dish: schnitzel with lemon wedges and Dijon, spätzle, green mixed salad

    - Vegetarian Main Dish: Greek potato, tomato, green bean stew with feta & crusty bread

    - Pasta Main Dish: fettuccini with ragu Bolognese (Marcella Hazan)

    - Out on the Grill Main Dish: teriyaki steak tips/vegetable kabobs (served with curried rice)

We like variety so I don't really have a lot of go-tos. I try to not repeat anything in the same months time but these are the most repeated over time. I love to cook and food quality is crazy important to me.

    - Beef Main Dish: beef rendang, real Czech Gulas (not that nastiness people call goulash with ground meat and elbow mac,) dry aged ribeye

    - Ground Beef Main Dish: ćevapi with home ground grass fed beef and lamb

    - Chicken Main Dish: pollo a la brasa, chicken picatta,

-Ground Chicken or Turkey Main Dish: fried chicken meatballs with home ground chicken thighs

    - Pork Main Dish: I don't eat pork

    - Vegetarian Main Dish: veggie jalfreezi, baingan bharta, saag paneer

    - Pasta Main Dish: we dont eat pasta (no wheat or most other grains) but back when we dis it was carbonara

    - Out on the Grill Main Dish: tandoori chicken, pollo a la brasa, Santa Maria style tri tip, ribeyes, beef and chicken satay, Greek style leg of lamb (warm climate so we grill year round.)

    - Main Dish Salad: still thinking, we eat a ton of veggies but not a lot of salads

    - Fish Main Dish: whatever wild fish looks best and is in season- prep depends on the fish

    - Other Seafood Main Dish (such as Shrimp, Scallops, Etc.): King crab legs, wild salmon cakes

    - Vegan Main Dish: I don't worry about something being vegan unless we have vegan guests and then I try to make something different every time so they don't have to have the same thing over and over

    - Homemade Soup: sweet potato with ras el hanout, Mulligatawny, tom kha, tom yum

    - Main Dish Sandwich: i dont eat bread so we don't eat sandwiches

    - Non-Vegetable Side Dish: rice a couple times a year- otherwise fruits and veggies

    - Veggie Side Dish: the list is too long- lots of variety, no "go to" so it stays interesting but generally determined by what is ready to pick from the garden

    - Quick & Easy Dessert: fresh in season fruit

    - Breakfast Main Dish: smoked salmon eggs benedict with thick slabs of tomato or asparagus standing in for the english muffin

FWIW, I wanted a chicken recipe the other day, so I looked under NYT faves.

    I made this; http://cooking.nytimes.com/recipes/6850-chicken-fricassee-with-vermouth

    It was quite good.

Also, a friend of mine recently served this at a brunch (the variation at the bottom where you use one large dish). It was very nice; she had added mushrooms fwiw. I do not usually like pot pie because of all the crust and the gluey gravy; this one is far lighter.

I know this is probably going to be a pain, but I find it interesting that you think Pear Tarts are an easy desert Funky! Could you share your recipe? I love tarts, but rarely take the time to make them. Also love pears. When I do a pear recipe, it is likely to be a pear cake with the pears on top or pear crisp. I am still searching for the perfect pear muffin recipe. Most of the ones I've tried, the pear taste gets lost.

Sigh again, I really wish SO liked lemon!!

Mtn is right-- I use puff pastry and pears halves that I've poached to "just tender". You can brush them with apricot preserves or sprinkle crystallized sugar. I like them plain but you serve with a drizzle of caramel or a cinnamon cider sauce. I can't eat ice cream, yogurt or crème anglais but they are all good on the plate too.

This is not the recipe I use but I usually cut the puff pastry in this way:

I actually prefer pear cake-- but this is so simple! Mtn's recipe looks great too. Love salted caramel!

Re: puff pastry...I always avoid recipes with it because 1. I am too lazy to make my own, and 2. when I've purchased it frozen to use, it has a really icky "off" taste to me - like maybe it should taste buttery but instead tastes like crisco? Not sure that's the right description, but something greasy that clings to the roof of your mouth? Can any of you who use it recommend something other than Pepperidge Farm, which is the only one I've tried (maybe the only one I've ever seen).

    - Beef Main Dish: Teriyaki marinated flank steak, broiled until med rare

    - Ground Beef Main Dish: don't really use

    - Chicken Main Dish: Chicken Piccata...so quick and delicious

-Ground Chicken or Turkey Main Dish: I use ground turkey to make meatballs or to use as taco meat

    - Pork Main Dish: Country style ribs using AnnT from the Cooking forum's recipe (adapted from Paul Prudhomme) found in this link scroll down...so, so good- Country style rib recipe

Vegetarian Main Dish: Spanikopita- I've made this for years and can whip it out without a recipe. Once you get the feel for filo, it's fast, too.

    - Pasta Main Dish: This could be for chicken fave, too, but it's chicken breasts, marinated in olive oil, fish sauce, garlic and lime juice, grilled then served with grilled red peppers over thin rice noodles and tossed with reserved marinade (not the stuff that had the chicken breasts, but extra marinade you reserve before adding the chicken to it)

    - Out on the Grill Main Dish: Tamarind marinated pork tenderloin

    - Main Dish Salad: Winter Panzanella from Michael Chiarello Winter Panzanella

    - Fish Main Dish: Fresh wild caught salmon fillet. Rub with a little olive oil, s&p, put in a COLD oven, turn oven to 400f, cook for 18-20 min depending on thickness. This is the BEST way to cook salmon I have ever found, ever.

    - Other Seafood Main Dish (such as Shrimp, Scallops, Etc.): Prawns sauteed with fresh green beans, onions and red peppers and Asian Marinated Black Bean sauce

    - Vegan Main Dish: Vegetarian fresh spring rolls (not fried) with peanut dipping sauce

    - Homemade Soup: New England Clam chowder

    - Main Dish Sandwich: Dungeness crab mixed with a little onion and mayo on English muffins with cheddar cheese, broiled until melted and crab is hot.

    - Non-Vegetable Side Dish: Bluebird Grain Farms Organic Potlatch Pilaf...I add mushrooms and some beef stock. Pilaf

    - Veggie Side Dish: Cold Gingered Asparagus from Mollie Katzen

    - Quick & Easy Dessert: Frozen berries with White Chocolate from Ina Garten: Recipe

    - Breakfast Main Dish: Toast

When the kids were home I cooked every night except when we had leftovers. Now it's just DH and myself and we take turns, or get takeout. We definitely love leftovers. Or DS will go by our favorite restaurants in the City and bring takeout for us on his way home. Nice.

Everything here is simple and fast.

    - Beef Main Dish: T-bone steak or Roast. Steak on the grill. Charcoal grill.

    - Ground Beef Main Dish: I fixed this tonight, great for cold weather.

    Cabbage Roll Soup

    - Chicken Main Dish: Oven baked whole chicken.

-Ground Chicken or Turkey Main Dish: Baked Turkey Breasts

    - Pork Main Dish: Pan fried (light oil) Pork Chops

    - Vegetarian Main Dish: Fried Rice with veggies.

    - Pasta Main Dish: Lasagna. (I have a simple no-boil lasagna recipe)

    - Out on the Grill Main Dish: Burgers and Dog's! :)

    - Main Dish Salad: Does Taco Salad count? If I'm alone, I'll eat a regular salad for dinner, but it has to have cheese on it.

    - Fish Main Dish: Baked Cod

    - Other Seafood Main Dish - Fried Shrimp

    - Vegan Main Dish: Cheese Tortilla's

    - Homemade Soup: Beef Stew

    - Main Dish Sandwich: Tuna Salad

    - Breakfast Main Dish: For me, it's either Oatmeal or cold cereal. DH, bacon & eggs, or Pancakes.

I could do that kind of tart shape with home made pie crust, but I would not call that "simple" because I am notoriously BAD at shaping dough! Still, using poached pears to make a tart would be do-able for me since my "go to" easy peasy tarts start with those little phyllo tarts that you can buy pre-made. They might even sell premade tarts with pie crust, I may have seen them. Also they do sell premade puff pastry thingies too. I'm kind of cheap and dead lazy so unless I am trying to impress, I might stick with the crisp though! Thanks for sharing those pear tart ideas. That photo just melts my heart, LOVE!

    LynnNM thanked l pinkmountain

Oh Pink, give it a try! They are not only easy-- they're very forgiving. You don't need to shape the dough at all. You just cut.. use the pear as your guide.. then cut a simple leaf or two to lay it at the top. It's really that simple!

I was very clear in my post that my go-to's are EASY. I promise this is.

I don't spend a lot of time cooking-my kitchen is awful, no usable counter space so I do a lot of very simple foods, but when the urge strikes, I make more diverse dishes. Following are my faves

    - Beef Main Dish: I make a family dish, we call it agasate. It's a braised eye round roast, then removed from the pan to soften a couple of chopped onions and some garlic. Put roast back in, cover with water and set to boil. Once roast is cooked, remove and cook down the juices to make a thick gravey-almost like french onion soup. Serve over thick noodles and be generous with the freshly grated parmesan.

    - Ground Beef Main Dish: Meatloaf and scalloped potatoes

    - Chicken Main Dish: Chicken alfredo w/broccoli served over noodles

-Ground Chicken or Turkey Main Dish:

    - Pork Main Dish: Baked pork chops and roasted veggies

    - Vegetarian Main Dish: Baked penne with marinara
