I have an old house with a newish addition. The old part of the house had, with a couple of exceptions, original trim. I have added back the missing original trim so that all of the old house has the same trim. The addition has nice, but ordinary, trim. It would look silly trimmed with the same trim as in the old part. So I live with what it has. At least it is all stained the same color and it all looks good.

But I would have a problem with three different types of trim and would probably re-trim so that there is consistency between the floors.

I would think a combination of windsor and sanitary would be OK, but I might think about repalcing the sanitary over time if I didn't like it. You could go with a simpler variation of windsor. (is that colonial?)

Think about straight lines and curves, and less about the name of the style.

FWIW, I am replacing all trim in my house. I don't know what the styles are called, but the windows and doors will be trimmed in 1x (craftsman?), crown is cove style, baseboards are the ordinary style that most people have. I have some traditional crown on the fireplace mantel that I need to integrate - I want the fireplace to be a little fancier. So I have to think about integrating straight lines and curves in the right amounts so everything looks like it goes together. (That includes furniture and fixtures.)
